Ingredients:
- 1 can chickpeas, rinsed and drained
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 red onion, finely chopped
- 1 cup cherry tomatoes, halved fresh cilantro, chopped
- Lemon juice (1 lemon)

- Combine Everything: Pour the dressing over the chickpea mixture and mix everything well together.
- Garnish and Serve: Garnish with chopped fresh cilantro and serve immediately, or refrigerate for an hour to allow the flavours to meld.
